First brisket (Hot and Fast)
As the fire and salt bbq course was cancelled I was determined to have a cook regardless.
Smoked a brisket Saturday night for the first time, 27mph coastal winds and rain weren't the best of conditions but turned out really well.
Took 4hrs 40mins, 350f until an internal temp of 160f. Wrapped with some beef stock until 203f. Triple wrapped in foil and two towels for around 2hrs then cut.

Also threw some ribs today, same awful conditions actually forgot to throw smoking wood on hence no smoke ring, still tasted great....

Looks awesome.
Looking into doing my 1st smoke this coming weekend, done some research over the last few weeks and always wanted to give it a try!!

Awesome work - both results look fantastic. What charcoal did you use?
I'm smoking 4 racks of ribs later today for evening tea. Yum. :-)

I used restaurant lumpwood ordered online from bar-b-quick, it's what's I've always used, burns well and keeps heat for ages. Had to buy some from Booker yesterday morning as I didn't have enough to cook the ribs, same catering grade charcoal but seemed to burn really quickly.
