im gonna go all posh this year whats the best way to cook a goose ?:biggrin:
For christmas dinner its gonna be a frozen one tbh cant afford fresh ,just thought id go all english and enjoy what my nan was raveing about all the years ,never tried it before !!!!

£20 quid for frozen in lidl's only two of us this year :)

I do a big goose every Xmas
better than that dried up shiit called turkey
Simple to cook once home from the shops give it a good cleanup under the cold tap
when your ready to cook it pierce the outer skin a few times as this will help to remove alot of the goodness ((FAT)) that you keep and freeze to do your Roaties in
get a large bakin pan/lid to rest the bird in but put it on a baking tray inside this ((so the fat oozes outand away from the bird ))Ii sound like nigella lol
cook on a small light summat like gas mark 4 for about 4 hours, keeping an eye on the thing every hour. Test after 4 hours by giving it a poke with a skewer to see if it is cooked in the middle. when it is warm to touch in the middle turn up the oven to gas mark 6 ish to give the skin a good old crispin
when cooked remove bird from tin and set aside to slowly cool down, put the fat thats left over ((usually over 1 pint)) into freezer bags and letft to go cold before chilling/freezing to use anytime in the year for your roast taties

I believe it's all the fats in it - but well worth it (tastes great as do the roasts done with it)
