400g Penne Pasta
1 Onion, chopped
2 Cloves Garlic, crushed
8 Sun dried tomatoes, chopped
1 Tin Chopped tomatoes
1 Tin Artichoke hearts, sliced
50g Black olives (Pitted)
Heat some olive oil (1 tbsp should do) in a large saucepan, add the onion, cover and cook until tender, stir in the garlic and cook for a couple more minutes then add the sun dried tomatoes and chopped tomatoes. Leave to simmer gently while you cook the pasta.
When the pasta is ready add the artichokes and olives to the sauce and some salt & pepper.
Either mix the sauce and pasta together or pour the sauce over the top of it.
If wanted, rip some basil leaves and sprinkle over the top.
