1 Tbsp Olive oil
1 Onion (chopped)
750g Potatoes (peeled and Diced)
A bunch of watercress
Heat the olive oil in a large saucepan, add the onion, cook covered for 5 minutes. (Don't let them brown)
Add the potatoes, cover and cook for another 5-10 minutes. (stir it now and again so nothing browns)
Add 1Litre of water and simmer until the potatoes are soft (about 20 mins).
Stick the lot in a blender and then season. (you may want to reheat it before serving)
Just hope your blender doesn't decide to fall apart while making this one, mine did and it took a hell of a long time to clean up the bright green goo. I think I've even got a photo of the mess somewhere, it was that bad.)
