Baking Potatoes - As many as you want.
Olive oil
Cayenne pepper
Preheat Oven to Gasmark 7
Wash and cut the Potatoes lengthways into eighths. Mix the potato wedges in a bowl with enough olive oil to cover them and as much cayenne pepper as required. (You can also add other ingredients at this point, I tend to add salt & pepper and paprika.) Make sure the potatoes are evenly coated and the cayenne is well spread. Place in a deep baking tray and and cook until the potatoes are soft throughout and lightly browned. (about 35 mins).
You can also do this with leftover baked potatoes, for them increase the temperature to about gasmark 9 and reduce the cooking time to about 15 mins, enough to brown them and make them crispy.
Serve with every condiment in your fridge.
