From my experience with Symbian (Nokia series 60) phones like the N70 you can't use the sim contacts as the default folder like Sony Ericssons or the 'standard nokias' (Nokia series 40) like the Nokia 6230i and the Nokia 6280.
You'll have to put up with going through the menu selecting sim contacts each time. Or there could possibly be an application you can download/buy that will allow you default the contacts folder to sim.
