1 carton/jar of Passata
Some tomato puree
Load of mushrooms
1 pepper
One large onion
Dried Basil, Oregano
Black pepper

Chop the garlic finel along with the onion and pepper. Slice the mushrooms.

Soften the onion and pepper with the garlic in a little olive oil with a teapoon of oregano and half a teaspoon of basil. When soft bung in the mushrooms and continue to fry for another minute.

Add the passata and bring back to the boil. Add some puree to your tsate and let the thing simmer for about 15 minutes. Add ome more oregano and basil to taste.

Pour it over pasta and eat like you never did.

If you like it try adding a tin of drained tuna to it along with sweetcorn or anything else you fancy. I sometimes add thinly sliced courgette and olives.
