    Default Plum Jam

    i have 2 plum trees in my garden one with damson plums and the other is victoria i think.

    i was thinking of making jam with them

    found this recipe on the internet, is this ok for both types of plums at it just says plums ? or does anyone know of a better or easier recipe? (this does look pretty simple)

    "Servings: 1/2 pint
    Prep. Time:
    Total Time:
    Ingredients:

    1 lb. plums
    1 cup water
    3/4 lb. sugar

    Directions:
    Clean plums. Cook in water until skins are tender, about 10 to 15 minutes. Cool and remove stones. Add sugar, heat slowly until sugar is dissolved, then cook rapidly until thick. Partially cool, stirring occasionally. Pour into sterile jars and seal."

    We have a supplier of plums in the office so I may give this a go.

    Any way to get more plums in my mouth has got to be good.

    Sod Jam. Make Damson Gin !

    INGRIEDIENTS
    damsons
    2 tablespoons of white sugar
    1 bottle of gin


    METHOD
    Empty the gin from the bottle and leave to one side (e.g. in a bowl). Fill the empty bottle ¾ full with damsons, add the sugar, and return the gin to the bottle. Close the bottle tightly. The gin will have to be shaken each day for ten days and then left for three months. After this period, you can sieve the fruit and the gin will be ready. Remember, the longer you leave the gin the better it will be.

    damson gin is great - try pricking the fruit though it helps leech the flavour out easier and you'll be lucky to fit them in a gin bottle we use one of those old fashioned jam type jars with lock down lid - like you get on a grolsch bottle if you know what I mean.

    got enough plums i think i'll give the damson gin a go, as well as the jam



    do you stone or cut the damsons? if not how do you get them in the bottle as what i have that i think are damsons are about 25mm diameter and very dark, was told it was a damson tree

    been to tesco got the jars for both the jam and the gin in it goes for the gin, should be just ready by xmas

    jam should be ready tomorrow but on a diet so won't have note of that for a while week may 2

    thanks for the tips on the gin, if anyone can think of anythink else i can make with the plums please let me know as i can't eat them at the mo diet won't let me and they are ripe now.

    tip for sterlising the jars

    was thinking on using boiling water, then had a brainwave and put them in my steamer

    so if you have a steamer it works great

    A tip for any jam mate, ALWAYS test a bit for "setability" (not a real word, but you know what I mean) by cooling a small ammount before taking the main pot off the boil, if it doesn't set when cool, keep cooking !

    yeah i saw that somewhere but this was pretty thick when i took it off.

    can you over cook it?

    and if i get it wrong can i put it back on the heat after its cooled to get it to its "satability" point?

    as now first batch is in the jars, the pan was very sticky when i washed it out and it was still warm, i hope i've not wasted this batch,

    small question can you eat the Damsons after you take them out the gin?
