Is there a special type of OBD cables to consider/ look out for that would suit the Yaris? I am so confused with all those terms, VAG, ELM 323....etc.

93c56 eep , clip over , port 0, reads and writes in miles.
Very east to do, but can not be done via obd.

nope, it's next to the big flat IC.
Early Toyota Yaris is 93c46, remove it read it with any available programmer in 8 bit mode. Post the dump and someone will edit it.
Is it more worthwhile to pay someone who knows the stuff to do it?

If you corrupt the dataset in the eeprom the gauges will not work and no mileage will display. but if this happends you can put on a new dataset dump, so all is not lost.
If you can not do this yourself you can post it off, there is lots of dashfixers who offer a postal service. good luck
