    Default Step by Step - StamDan's Summer Salmon Feast

    No pics guys sorry... But this is a recipe I excerise on a regular basis and is excellent for those summer evenings... Its part cold part hot the way I serve it here but you can easily get away with pre cooking and having it all cold.

    You need:
    Salmon fillets (I'm greedy and go for two per person)
    One fresh lemon
    Fresh dill
    New potatoes
    Pasta of your favourite variety
    Mayo
    Tin of sweetcorn
    Fresh Mushrooms
    Two eggs
    Fresh mixed salad
    Olive oil
    Unsalted butter

    The method:

    Hard boil the eggs till they're solid and sliceable. Leave to cool.

    Boil up your pasta (approx 20 mins) and at the same time brown off the mushrooms. Starch the pasta with boiling water after cooking then drain it along with mushrooms then leave to cool. Once cooled mix the pasta and mushrooms in a big bowl and chuck in the sweetcorn with mayo to loosen it all up - You can sub the mayo for olive oil if you want. Wack in the fridge - this stays good in the fridge for next day if you make too much.

    Pre heat your oven to 190

    You can pre boil the new potatoes if you want them cold with the meal. Boil them for around 25 mins or until you feel little resistance when you jab them with a fork.
    Once boiled chuck a load of butter over them and some rock salt (the big crystals).

    At the same time as starting the potatoes get the salmon out. Wash it under cold water. Lay out tin foil that is double the size of the fillets and lay it NON shiny side down on the worktop. Place each fillet onto it's respective foil. season with salt and pepper, a half-slice of lemon and some finely chopped dill. Drizzle with olive oil or butter depending on your taste. Wrap them up and wack in the oven once it is at temp. After ten mins open them up for a cheeky smell - the outer flesh should be cooked with the inner centre still a little raw. Put back in oven for a further ten mins and they should be done.

    Serve straight out the foil to plate, or leave to cool if you want it all cold. And arrange all the salad/pots/pasta around the plate. Slice the boiled egg and garnish forthwith!
