This is what i'm having for my dinner tonight so thought i'd postit up for you


Fish Cutlet

200 g tuna tinned brine tho I have used salmon to.
2 or 3 big potatoes<o></o>
1 small onion chopped very finely<o></o>
¼” ginger grated<o></o>
3 cloves garlic crushed<o></o>
2 green chillies chopped very finely<o></o>
¼ tsp turmeric<o></o>
½ tsp black pepper powder<o></o>
1 tsp salt<o></o>
Few coriander leaves chopped finely or paste<o></o>
1 egg beaten
2 eggs<o></o>
½ litre oil<o></o>
300g bread crumbs
(I sometimes add peas or sweet corn)<o></o>

Drain water fro tuna an break up with a fork, mix with potatoes, turmeric, salt,coriander, beaten egg, pepper and keep. Heat 1tbsp oil in pan fry onion ginger garlic for 2-3 mins and mix into potato mix.

Keep everything close and a tea towel for hands or wash bowl is good. Wet your palm take dollop of tuna mix and squeeze well and shape as a patti the edge should be thin, dip into the 2 beaten eggs and then coat in breadcrumbs, keeping single layer. Repeat until all mix gone.

Heat oil and fry cutlet 4-6 at a time till golden brown.

Can be frozen

Serve with tomato sauce bloody good too!
