Default Chilli Eggy Bread & Bacon

OK, I blatantly stole this from Jamie Oliver's cook book I bought the missus at Xmas but it is very very good!

    What you need:

    Some Chilli's
    Eggs
    Bacon
Some nice crusty bread OR Crumpets (As Jamie does them)

This is based on one portion:
OK, set your bacon off cooking. I grill mine (Smoked back bacon), but fry/poach if you wish, 2 slices per person I recommend.
Crack 2 eggs into a cup/bowl and whisk up - Add some salt/pepper if required but nothing else.
Chop up a chilli or 2 finely (nice spicy ones!), add to the mixed egg.
Pour the egg onto a plate (makes life easier). Place a slice of the bread in the mix, soaking up the mixture on both sides. You will notice the chilli's sticking to the bread. Repeat this for the 2nd slice.
Heat a frying pan with some oil (so it doesn't stick!)then place the bread into the pan (one at a time), turning as required to cook it thoroughly. You may need to add some more oil for the next slice. I use Olive oil here, healthier
OK, bread cooked, bacon done, place the bacon on the bread.
Add some Essential HP Brown Sauce all over it and Enjoy!!!! The Chilli goes amazingly well!

Again you could use Crumpets, but i've only tried it with nice bread to date.

    It is fantastic!!!

    That sounds amazing...thanks for sharing!

I like making Breakfast Burritos...something my girlfriend mentioned from a trip to california..
Just streaky bacon, scrambled eggs in a big flour tortilla wrap, add some baked beans, maybe a bit of salsa, and some hot sauce to your taste...
Thinking maybe could use the chilli and egg concept/mixture to give the eggs a bit of kick and a better mexican flavour!

lol, I made it up. Obviously the rind would have to go but it's the same as boiling a ham?

sounds good, although i would tend to use peanut oil, olive oil is not that good for frying.

    Hi Peeps,

Made this today after a heavy day yesterday....I must admit you need HP Brown Sauce with it....I fried the thick cut smoked back bacon in the frying pan with olive oil and then fried the egg-bread :-D Very Nice, not sure about the fat levels but you need to treat yourself every now and again.

    Nice One.
