    Default 6-pack diets - Post your creative recipes!

    I'm doing my own challenge that I started a few weeks ago but due to commitments I'm doing it less intensely over a longer time period (minimum 4 times cardio a week, eat very healthily). Now the problem I am having and that I anticipate for our journallers is keeping the diet interesting. Rest - fine, exercise - fine, diet - problematic!

    Since I've started my 'challenge' I haven't eaten anything bad at all. The problem is that I find my healthy food (white meat, brown rice etc.) so boring that I will go without it at times because I have no desire to eat it. What we need to keep everyone going is creative recipes that are still extremely healthy but are a little exciting. So if you've got a great recipe that's healthy, tastes good and keeps you coming back for more then post it here because I'm really flagging at the moment!

    Roach's Egg white omelette

    Ingredients:

    6 large free range eggs
    2 peppers (any colour)
    1/2 red onion
    Spinach or cabbage
    Garlic
    Chilli powder
    Black pepper

    Method:

    Separate the egg whites from the yolks (each large egg white contains approx. 3.5gms protein) and put them into a bowl. Add as much black pepper and chilli powder or crushed garlic as you know normally like (nowt if you don't like a bit of kick to your food). The egg whites are pretty flavourless so this seasoning will help.

    Chop up the onion and peppers to small pieces. Fry them off in a pan for about 4/5 mins to stop them making the omelette too soggy. Boil the cabbage or spinach for 4 to 5 minutes as well then drain.

    Pour the egg white mix into a non-stick frying pan on a high heat and add the peppers, onion and cabbage/spinach. Fry for about 3 minutes then pop it under the grill to cook the top until it starts to turn brown.

    Serve with on it's own or with some salad..then wolf the bugger down!

    You could add tuna, chicken, turkey(pre-cooked) chopped up in the mix too.

    Something I am about to try, beef jerky.

    **Ingredients
    2lb lean braising steak (any cut will do as long as it is lean, I'm using a salmon cut [just because my mate works on a butchery counter])
    3fl oz soy sauce
    2 tsp chilli powder
    1 tsp onion salt
    1 tbsp Worcester sauce
    ½ tsp ground white pepper

    Method
    Remove all the fat from the meat and cut into strips. This is easier if you half freeze the meat first. Then mix with all other ingredients and leave over night. Next day put in a very low oven (about 110°C) on a rack over a tray and leave for about 5-6 hours.

    Oh, and also, tuna burgers.

    Tuna
    Oats
    Egg white
    Seasoning of choice, cajun and chilli are both nice. Basically experiment till you find something nice.

    Fiddle with until firm and in a burger shape, fry/foreman/grill.

    For recipes you really can't go wrong with the stuff they print in Mens Health.

    A favourite of mine is spinach stuffed trout, served with a cous-cous stuffed pepper. Nutritious, and delicious - but probably not for those avoiding carbs.

    Really simple -

    For the fish

    1 Trout, bones removed (get the fish monger to do this)
    Handful of baby spinach
    Juice of 1/2 a lemon
    Handful of chopped parsley

    For the Stuffed Pepper -

    1 Pepper (any colour), with top removed and deseeded. (Keep the lid!)
    1 Serving of cous-cous (any variety - I'm quite into Ainsley Harriet's Moroccan style at the minute)
    Salt and freshly ground Pepper

    Method

    Cook the cous cous as per packet instruction, allow to cool down.

    Take your trout and stuff liberally with spinach, parsley and lemon juice, then season both sides with freshly ground pepper. Wrap in tin foil.

    Place the prepared pepper onto a baking tray, and brush lightly with extra virgin olive oil, and season with black pepper and a little sea salt (if desired)

    Place the pepper into a preheated oven (at 200 degrees) for 20 minutes, then remove from the oven and add the cous cous. Replace the lid.

    Place the wrapped trout on the baking tray with the pepper, and return both to the oven for a further 20 minutes (dependent on the size of the fish and how well you want it cooked).

    When ready, serve with mixed veg.

    This recipe is great - you can use any fish you like, stuff it with a variety of things (ricotta works very well with the spinach, for example) and you can also stuff the pepper in numerous ways - get creative.

    This is on my list of things to try with a steak.
    When making mashed tatties, add in some chopped chive, salt, pepper and quark. The quark makes it go all creamy, so there is no need for anything else like cream. The quark also adds a big chunk of protein.

    Protein Royale

    Nothing fancy here, but it actually tastes OK and is packed with protein.

    1 tub low fat cottage cheese, 1 piece salmon, 1 sweet potato (cooked just like you would a regular jacket potato).

    I just sort of mix it all together on a plate. If you don't like salmon or the bones put you off use tuna instead.

    This months Mens Health had a great idea for lunch, it was called the Mexican Muscle. I made it last night, had it for lunch today after the gym, was bloody brilliant. Simple to make, cheap and tastes great.
