    Question Help with curry recipe please

    Now then, guys and gals

    It's me Birthday next week and every year since I can remember I've had a BBQ with me mates to celebrate it. However, as it seems we can no longer rely on the weather in August and I fancy a bit of a change, I'm looking for your help.

    I want to cater a curry, preferably lamb, for about 30-35 guests.
    The curry will have to be mild to middle of the road for some of the guests, I reckon on having cream to add if it's too hot, and plenty of chillies for those who want extra pep. I can lay my hands on a very large cooking pot but am a little lost on a good tasty recipe for so many.

    Any help would be appreciated

    i'll have a look in a book tonight for you (don't often make lamb curry's)

    but if you want poppodums and the onion salad/pickle thing then my recipe is:

    1 onion finely chopped
    a few de-seeded cherry toms diced
    a few slices of cucumber de-seeded and diced
    pinch of salt
    dash of lemon juice
    and the secret ingredient...... a good dollop of mint sauce

    then chill for at least a few hours. yum yum

    Cheers sound nice,

    Also, has anyone tips on cooking rice for so many - should I cook it all in one go?
    With it being such a great quantity how long for.

    I'm gonna cheat with the roti and have them delivered in. But wanna make an effort with the rest :-)

    Somewhere there is an e-book of "The curry secret" by Kris Dhillon hoofing around. I have not made a bad curry from that book (I bought the paper copy)

    I'll speak to my mother and get back to you. But for 30-35 guests you will want to cook it all in one go and on a slow heat..forget roti m8 get some proper nan bread from your local kebab shop (NOT pitta bread)

    just do as you would for 4 people but adjust amounts for 35! why not get 2 big pots and half the amounts one hot and one mild curry pataks make a lovely kashiri curry paste and also maybe make a bhuna or balti? ye an like said get proper nan breads or even the lil mini ones not pittas!! there horribleand you will want plenty of cooling dips cucumber riatas an mint sauces

    Not pittas dude, there is an immense difference, pittas will not do a curry justice. Get the real thing

    you could always make a big pot of stew\scouse too and add bit of curry powder for the lamers lol

    Don't forget all the other accompaniments, poppadoms, mango chutney, lime pickle, aubergine pickle, raita as the_wizzard already mentioned and of course, cold lager.

    Be careful with the rice if you don't cook it all at once as it's a good source of food poisoning if not eaten soon after cooking.

    Are none of your 35 guests veggie?

    As the_wizzard also said, for the main curry recipe I'd just look for a normal recipe and adjust the quantities to suit 35 (using common sense for any adjustments in time needed) or make several different dishes so people can have a bit of each.

    You could make a big batch of a base sauce and then use that to do a few different dishes, especially if you've got any vegetarians coming or if you want to make a real hot one and a mellower one.

    I can post up a tried and tested recipe for a base Balti sauce and then some others that use it.

    Cheers and thanks for the response guys - some good advice.

    Alas, none of my guest are vegetarian, it's like that carlsberg ad at the BBQ lol.
    The sightest hint of anything green and and it's all 'WTF is THAT' or 'are you trying to poison us' and 'if I wanted veg with me meal, I'da taken a bite outta yer lawn' etc etc. There all heathens, tried to introduce quorn to em a couple of years ago and nearly got lynched.

    Will stick to naans as suggested.

    Kinda liked the idea of the mince curry for 30 (proposed by the_wizzard) - seemed simple enough. But fancied something with a more complex flavour structure or am I being over ambitious?

    personally I'd cheat and see what sort of deal you can get from the local curry house

    For a simple curry, I do the following, this serves 2 easily

    2 chicken or turkey breasts (might need 1 turkey breast depending on size)
    1 jar of tesco finest curry sauce (I usually get dopiaza)
    1 packet of coconut milk
    some paprika
    2 Onions (1 sliced, 1 diced to give different textures)
    Fresh Coriander
    Tomato puree + water if there is not enough liquid

    1. Chop chicken into cubes, and mix with paprika
    2. Chuck onions in large pan and fry for about 5 mins to soften and sweeten
    3. Add chicken and fry for a few mins on high heat
    4. Add Sauce and coconut milk sachet
    4b. Add tomato puree + a bit of water if it looks like there's not enough liquid
    5. Simmer for 20 mins
    6. Add coriander and serve

    For nan bread, I tried making my own a few weeks ago, something like this:

    Some fresh yoghurt
    Some self raising flour
    Bit of salt
    Something to brush it with, I used some garlic butter (melt some butter in the microwave and add in some chopped garlic)

    Can't remember the quantities, but you mix them together, leave for a bit then roll out, brush and whack under the grill on a hot baking tray for a few mins - easy to make, not quite the same taste as nan bread but was good enough

    do like i said make 2 or even 3 pots of curry different strengths. if you wanna try this do it in nxt day or so as a tester simple and yummy but lil bit hot

    get a jar of pataks kashmiri masala paste

    bag of curry leaves

    2 tins of tomatos just cheap ones will do

    corriander leaves fresh

    2 large onions

    oil

    freshly crushed black pepper corns


    half a kilo of lamb

    cream if you wanna weaken it at end


    put oil in pan and throw about 8 curry leaves in warm up then add 2 diced onions brown shud take 20 mins on low heat then add quarter of jar of paste let it cook out for few mins then throw ya lamb in cook for few more mins then add tinned tomatos also mabbe a teaspoon of sugar? oh and also add a couple of cups of water or use tomato tins bwt 2 tin fulls of water and also a teaspoon of black crushed peppercorns leave it to simmer away lid on. after about half hour throw in half a handfull of fresh corriander leaves chopped save rest to garnish at end. the longer you cook it the better it will taste. also tbh i use mutton for mine i get from halal butchers it tastes so much better. that amout shud do 6 to 8 people dunno depend how greedy they are lol.

    dont forget you dont have to use meat! you can use fish too pollock\cod ect
