It's becoming clear that refined carbohydrates are the real reason for the obesity epidemic. Fat intake seems to have very little to do with increasing body fat.
If carbohydrates are not burned as fuel they are stored as fat. There is also evidence to suggest that saturated fats are not the cause of heart disease, again, it is becoming clear that diets high in refined carbs are the reason for furred arteries. Some research even questions whether cholesterol levels are important in heart health as studies seem to suggest our obsession with LDL and HDL cholesterol could be a waste of time.
It is also important to add that fat intake is essential, not only for unsaturated healthy fats such as oils rich in essential fatty acids such as omega 3 and 6. But also because some nutrients need fat intake in order to be absorbed by the body. The low fat diet is the worst diet a human can choose, it is poor for nutrient absorption and low in essential fatty acids. That's why whenever I see a food label that says 'only 3% fat' I am amzed, because people assume it is a healthier option. Usually these products have high levels of sugars and starch, this appears to be far less healthy than a higher fat content.
The 'fat free' obsession is a marketing scam and if you have a partner (women seem to be obsessed with low fat diets) who insists on low fat this and low fat that, try and talk some sense into them. They are not only going to fail to lose weight, they will also be affecting their long term health by reducing the ability of their body to absorb essential nutrients.

Am I right in thinking that when excercising, stored carbs are used first rather than body fat.
Thats how i understand it, yes.
So in effect, your burning the calories off rather than having your body store them as fat!
It all depends on what energy system out of the 3 you are using. Energy system 1 involving short bursts 1-3 secs eg starting blocks in sprint uses ATP so no fat burned. Enery system 2 burns carbs and energy system 3 for low intensity exercise which is the one you want to be utilising as it burns fat and protein. So if you wanan burn fat just go for a long low intensity jog.
