    Default Curry

Right, i wanted to have a go at making a curry paste that i can use to make a variety of currys with. I wanted to make it from scratch and with fresh ingredients.

The stuff in jars is full of salt and fat and i was told that proper freshly makde stuff is quite healthy for you due to having very little fat and salt in.

Could someone put a receipe and method up so i can have a try?

    Thanks

    Rob

The Jamie Oliver "Minsitry of Food" book has recipes for 4 base pastes that are very good.

Try this book matey, it takes you through making a basic paste to which you add different ingredients for different dishes, my mate swears by it but never tried it myself.

That Korma recipe appears to be full of salt and fat...

It seems it when you first look, but there is only 1 teaspoon of salt (around 6 grams at most) and 120ml oil in the base sauce and that should do about 5 large currys (or around 8-10 people from what i was told) and in the actual Korma bit there is only 1/4 teaspoon of salt (which could be left out) along with a little single cream. however the Korma bit is just for 2 people and not 8-10.

I think Tescos own korma (that does only 2 or maybe 3 people at a push) contains around 3.6g of salt and close to 20g of saturated fat.

I dont know how much salt exactly is in the above recipe but i think it works out to be around 0.9g of salt and 15ml of olive or veg oil per person.

I know Currys arnt good for you and dont think there will ever be a really nice one thats 'healthy', but making it yourself has got to be better than the shop bought stuff thats full of allsorts of things.

I got a really good recipe for a chilli con carne, but used the wrong chillis (i was meant to get green chillies and i got really strong green chillies by mistake and put 13 of them in. It was far to hot to eat but would have been really nice if it wasnt so hot.

I will upload that tomorrow if i remember. weel nice and again not too bad for you as i dont think you put any salt at all in it or fats (excpet a little to cook the minced beef.)
