    Default fried rice

    how do you make nice tasty fried rice. recently started trying stuff in the kitchen. i cant get it right. it always tastes bland. i boil the rice first. then drain it and cool it off. if i am prepared it goes in the fridge the day before. A bit of oil in the wok. not quite sure how much to put in. get it hot and drop the rice in. i splash in som dark soy sauce(again, not sure how much) and add a beaten egg. end result is bland tasting crap. any ideas

    you need to put a dash of fish sauce in not to much ,that should taste loads better

    Pea & Egg Fried Rice

    Serves 2 as a side dish
    Preparation: 5 mins - Cooking: 10 minutes
    Ingredients


    • 2 eggs, lightly beaten
    • 10ml (2 tsp) sesame oil
    • 5ml (1 tsp) salt
    • 30ml (2 tbsp) groundnut (peanut) oil
    • 500ml (2 cups) of cooked white rice, cooled completely
    • 125ml (½ cup) frozen peas, thawed
    • 2 spring onions, chopped

    Method


    1. Put the eggs, sesame oil and half the salt in a small jug or bowl, mix a fork and set aside.
    2. Heat a large frying pan over a high heat. Add some groundnut oil and when it is slightly smoking, add the rice, remaining salt and peas and stir-fry for 3 minutes, or until it is heated through.
    3. Next drizzle in the egg and oil mixture and continue to stir-fry for 2-3 minutes or until the eggs have set and the mixture is dry.
    4. Toss in the spring onions and stir-fry for another 1 minute then serve at once.

    Serving Suggestion


    • This classic rice dish goes well with just about any Chinese main course.

    I use this recipe off the BBC food site. Works well, although I leave out sesame oil as I find it too overpowering.
    The key bit is cooking the egg for 10 seconds or so on the side of the pan before mixing it in to the rice.

    how can you leave sesame oil out of fried rice....the whole fried rice smell and taste is sesame oil.

    I agree for your first few goes cook the egg away from the rice and mix it in and once your used to making fried rice you should be able to pour a beaten egg over the top and mix it so it all separates and doesn't become a big ball of gunk.


    The way i do mine....

    Boil your rice so its soft but not fluffy.drain it out for as long as you can.
    Heat a teaspoon of oil (sunflower or vegetable) and small knob of butter in the frying pan/wok get it nice and hot but not burning.
    Throw your rice in but not too much as it'll cool the pan down.
    Stirring constantly add a bit of salt and a bit of pepper...few dashes of dark soy sauce stir until it's all coated.
    Next throw in some sliced spring onions and some previously scrambled egg.
    Finally a few dashes of sesame oil give it a good stir to get everything coated and your done.

    Another tip if your rice seems a little greasy or wet is to put it in a bowl in the oven on about 150 for a while to dry out a little but make sure you turn it every so often or the grains on top will start to go a bit crusty.

    cheers for the help. also heard today to use just salt pepper and a pinch of sugar. apparently it works wonders.

    I make fried rice on a weekly basis hubby has it for lunch every day..here's my suggestions:

    I use basmati rice, drain and cool..i chop various veg, string beans, baby sweetcorn, peppers spring onions mushrooms.mange tout, sugar snap peas...whatever takes your fancy really..plus chopped fresh chicken.

    first heat wok I use groundnut oil then put in beaten eggs and scramble, take out of pan and put to 1 side.
    add bit more oil and stir fry chicken..add chilli flakes while cooking, gives it a bit of a 'kick'.add veg continue to stir fry..re- add scrambled egg..then gradually add rice stirring as you go, when you have sufficient rice in , then add some light soy sauce and a teeny bit of dark soy..mix well...then some oyster sauce..keep stir frying till thoroughly heated.

    I make a 14" bulk load and freeze in individual containers...It's also great served with sweet chilli sauce added mmm..pic shows prawn 1 I made..

    my kids beg for my fried rice

    boil rice - not too soft while boiling add some turmeric for colour , drain rice

    cube or strip 2 chicken breasts , marinate for a while in light soy sauce, while cooking in wok add some chinese five spice.

    1 onion , 1 pepper ,2 or 3 carrots , 1 decent sized leek , few florets of broccoli , cut all into stips / pieces , when cooking in wok add garlic salt and some black pepper.

    cook chicken first, take chicken out , then cook onion/pepper & carrots after a few mins add the broccoli & leek as these don't take as long. then take veg out of wok, put in boiled rice , keep it moving in wok , when it gets nice and hot , add an egg and again keep it moving , when egg is cooked add chicken and veg and stir together & serve.

    I keep it fairly simple..

    Boil your rice as usual and when its almost done, drain it and run it under cold water to cool it then stick it in the fridge. Don't overcook the rice or you'll end up with a bowl of stodgy shit!

    When your ready to make it, get your wok nice and hot with a little oil in it, crack in an egg and scramble it up, add the rice and keep stirring constantly, add a few dashes of sesame oil and at the end a splash of soy sauce...

    Egg fried rice..done!

    I reckon the sesame oil gives it the proper taste, it's pretty bland without it

    Seen a few recipes that say to add eggs raw, then the rice or vice versa.
    Dont! You always end up with a soggy mess.
    Cooked eggs and then add rice.
    Also any ingredients as stated above can be cooked before adding rice. Just make sure the rice is fully heated through, as it can be a source of food poisoning.

    Everyone finds their own way, but my preference is;
    Boil a mixture of basmati and long grain rice to the point just before fluffy, you need it to be just a tiny bit raw in the middle. Drain it and pour boiling water over it until the water runs clear. That gets rid of the starch.
    Let it cool down.
    The, heat your wok/pan without oil until it starts to smoke. This will help to make sure the rice doesn't stick to the pan, then add a little oil. Doesn't matter which, but I like plain Olice Oil.
    Throw some chopped onion in and keep it moving for around 30 seconds. next, throw an egg in and keep it moving so that as it cooks it also breaks up.
    Now, put the rice in a bit at a time, in between each bit, put some dark soy on it, you want to colour the rice so it's slightly brown and you can only just smell the soy.
    All the time, you need to keep it moving.
    Lastly, if you want any meat or other veg in nows the time.
    that's it.
    Fish oil is ok if you want to use beef or prok, but personally I like the taste just as it is above.
    Play around with a few suggestions until you find your own way.
