Carrot & Coriander Soup

- 1 onion sliced
- 1 carrot sliced
- Bunch of fresh coriander, roughly chopped
- 2 pints of vegetable stock
- 1 tbsp veg oil
- Heat the oil in a large pan and add the onions and carrots. Cook for 3-4 minutes until starting to soften.
- Add the vegetable stock and chopped coriander and bring to the boil. Simmer until vegetables are tender. whizz with a hand blender or in a blender until smooth. Re-heat in clean pan if needed and serve.
