    Default Blue Cheese Souffle

    I've just tried this for the first time, and it worked like an absolute charm.

    Ingredients:
    2 teaspoons of cornflour
    small amount of butter for wiping around your ramekins
    4 egg yolks
    2 egg whites
    85g of cheese (i used Dolcelatte)


    Whisk your egg whites into stiff peaks (so when you tip up the bowl they don't fall out) then mix the yolks and cheese together and then "fold" in the egg whites and cornflour.

    Pop em in the oven at 200c and check on them around 8-10 mins, but i gave them 13mins and ended up with this.



    It tastes bloody great too.

    Only my mums original Napoli ones mate but they're top secret, but just for you i'll see what i can do.

    Its enough for two souffles and the way you phrase it you sound surprised as if its a lot?

    Calorie and Nutrition Values for 100g of Dolcelatte Cheese
    Calories 366
    Protein 17.8
    Carbohydrate 0.4
    Fat 32.3
    Fibre 0.4
    Alcohol 0

    then its 2 egg yolks, 1 egg white and a tsp of cornflour per person, so i reckon probably around 350-400 calories per souffle.

    Wikipedia says:
    All of the egg's vitamin A, D, and E are in the egg yolk. The egg is one of the few foods that naturally contain vitamin D. A large egg yolk contains approximately 60 Calories, the egg white contains about 15 Calories (60 kilojoules). A large yolk contains more than two-thirds of the recommended daily intake of 300 mg of cholesterol, The yolk makes up about 33% of the liquid weight of the egg. It contains all of the fat, slightly less than half of the protein, and most of the other nutrients.

    So its cholesterol level ain't great, especially when you add the cheese, but its not like you are going to have one every day.
