    Default Spinach, aubergine and chickpea curry

    Made this tonight, thought it was very good and very quick and easy to make.

    I'd recommend that you don't prepare the spinach as suggested though as boiling it then squeezing it will remove a lot of the nutrition and flavour. Instead, steam the spinach and finely chop it. I think you also need less as you're not turning it in to mush and reducing it so much, I made half the quantity specified and probably only used about 350g spinach (It seemed like a more than reasonable quantity once cooked in comparison to the other ingredients).

    Less than 30 mins preparation time
    10 to 30 mins cooking time
    Serves 4


    This delicious vegetarian curry is packed full of flavour and is ready in less than 30 minutes.

    Ingredients




    Preparation method


    1. Cook the spinach in boiling water for two minutes, then cool it under cold running water and squeeze gently to remove most of the liquid. Place in a food processor and chop the spinach to a coarse purée.
    2. Heat half the olive oil in a large pan and cook the onion, chickpeas, garlic, chilli and spices for five minutes over a medium heat.
    3. Add the remaining olive oil and the aubergine. Cook for ten minutes, stirring often, until the aubergine is coloured.
    4. Add the tomatoes and a pinch of salt, then cover the pan, lower the heat and simmer for 15 minutes until the aubergine is soft. Stir in the spinach purée and serve.

    If you ever get the chance it might be worth doing a slight variation to the original recipe:

    Ingredients:

    1 chopped pepper
    2 tbsp vegetable oil
    2 medium red onions, chopped
    6oz soaked/cooked chickpeas - use the water that the chickpeas are cooked in as stock (about 1/2 pint).
    2 garlic cloves, finely chopped
    2 fresh hot green chillies, halved and thinly sliced - no seeds
    1 tsp coriander seeds, ground
    1 tsp cumin seeds
    1" fresh ginger
    1 small aubergine or less (I use about a third of an average sized aubergine)
    A good squeeze of tomato puree - about 3 tablespoons (more or less according to taste)


    Cook as above (OP) but don't add the chickpeas until step 4 - then add the tomato puree & stock (don't throw it all in at once). Simmer until you get the desired consistency- about 10-15 min. Add salt/pepper & a squeeze of lemon juice if you're a bit poncey.

    Had this tonight - fuck load of spinach though. Very tasty - only two eating so plenty left over. Will try variation next time but very tasty for a veggie dish!

    Seen this recipe on http://cr0.co.uk/curry/index.php not tried it myself, but once I have perfected my BIR curry dish I want to try a meat free dish and see if it is WIN!

    That said, my first ever base sauce and curry from that forum was a blinder...

    Very nice, tried something similar before and I agree with the steaming or alternatively saute it in a pan with some butter.
