Aye, the cat just loves boxes. Crazy thing; she started to chew up the packaging. As long as it's not my smoked ribs or pulled-pork (Finbar saunders quote here), I do not mind.
I was going to go for a cheaper smoker but heard stories about them being difficult to maintain a steady temperature over a long smoking time plus they tend to rust quite quickly.
That other Weber bbq grill you see in the photo was bought in 2005 and it still looks and works great so that and the rave reviews of the WSM made me go for it. It comes with a really decent cover too.
Will post updates when I start the thing up next week (hopefully)!
How long does the process take with ribs etc?
From the research I have done, the average for fantastic smoked ribs seems to be around 4 to 4 1/2 hours. I can curl racks of ribs up by using a long wooden skewer to hold them so the WSM can fit three on each of the two levels. May squeeze 8 on there - depending on the size of the racks.
A boston butt or pulled-pork joint would take 10-11 hours. But the wait is worth it. 'Low-and-slow'.
I have boxes of hard wood arriving tomorrow. Oak, Apple and Hickory. (From the chap on here http://bbqsmokingwood.co.uk/)

I pan-seared two cannon of lamb the other week then tea smoked it with lapsang souchong for about 15 mins afterwards, just pink in the middle and more moist than a hookers underpants. Twas beautiful!

Yup, just some rub/spices on the meat and then in it goes.
Haven't seen those smoke bags before. May be worth giving them a go or you could get a cheaper smoker cooker.
I expect the WSM to last me years so it works out at a very reasonable price.
My bacofoil smoking bags arrived today, rapid service from the Ebay seller!

Jack Daniels do wood chips, They're ace for a great flavor on Ribs. Had them at a BBQ last year and going to smoke some myself this year.
Well... Disappointed doesn't quite cover it!
Dry chicken with very little aroma or smoky taste. Gutted. Not recommended!!

My first 'smoke' should be taking place on Monday. Will be visiting the butchers tomorrowto order a few racks of ribs.
First rib cook.
A bit windy today and that kept dipping temps below 200. Put a make-shift wind break up and that sorted it out. 30 mins of resting and they should be ready.
1st pic - rub sprinkled on the baby backs
2nd pic - coals ready. Got some oak and a bit of hickory wood on there.
3rd pic - 3 1/2 hours in and looking good!
Will be eating in 30 mins. Hopefully hasn't over smoked it.
That has just made me real hungry!
