as with all my recipes this is borrowed from somewere and tweaked a little by me.
Ingredients:
400g can of chickpeas.
Handfull of fresh parsley flat-leaf or curly. (corriander works well too)
2 tsp ground cumin.
2 tsp of ground coriander.
1 tsp of chilli powder. (i use hot)
2 tbsp plain flour.
3 birds eye chillis. (optional but i like a bit of spice)
1 red onion.
2 cloves of garlic.
Method;
Wash the chickpeas and dry off with kitchen roll and place in food processor, chop the garlic cloves and red onion and add that to the chickpeas, add the plain flour, parsley and the spices and a pinch of salt. Whiz up the blender and mix until fairly smooth (not so much that it turns into a paste) remove mix and shape into four burger shapes.
Heat up some oil in a pan, add the burgers and shallow fry for about 5mins per side (until golden and crispy).
I usually serve these in a nice toasted flat-bread with a bit of grated cheese and some salad leaves and some home made raita.
Raita ingredients:
Natural yoghurt.
Fresh Mint leaves.
half a cucumber.
Grate half a cucumber into a muslin cloth and squeeze out excess water, add a good amount of natural yoghurt and chop up the fresh mint leaves and add to the cucumber and yoghurt, give it a good stir.
I've made these 5 or 6 times now and reckon they are delicious. The reason i first made them was because my Mrs is a Vegetarian and they're suitable for her and they're pretty healthy.
Also reccomend using a spicey tomato salsa instead of the raita.
