Can you not thicken by just reducing down?
The addition of any thickener will affect the taste, even cornflour.
No need for half the ingredients listed. Been making chilli for 30 years, basic ingredients - meat, tomatoe puree, chilli (any that you like) cumin, caraway seed and kidney beans. Water just to keep it loose. Sometimes I may use onion, and sometimes omit the kidney beans and add refried beans at the end.
If using refried beans keep stirring or they will sink and burn,and be sure to add some nacho cheese (or cheddar).
But TBH, make it how you like it. If it tastes good - enjoy.
I will give this a bash on the weekend minus the gravy - always interested to try different chilli recipes

I've just got a few jar's of Shitto paste form a guy at work (from Ghana). Interested in using this and might whack some in my next batch..

Make a little slurry of warm water & some cornflour then pour that in to thicken it up without spoiling taste
