    Question Soup recipes

    With winter here now i've always loved having a hot soup to warm me up, and with this in mind i managed to grab a soup maker today, this one in fact, but a lot cheaper lol.

    It comes with a few soup recipes but i was wondering if any members were in to making their own soup and had any good recipes?

    The wife is after a Cuisinart version of one. Waiting for the nectar points to build up enough

    Lot's of different soups obviously. One I knocked up recently was a Potato and Leek soup.

    2 Large Leeks, finely sliced
    2 Jacket Potatoes, skinned and diced
    2 Onions finely chopped
    Few chilli's finely chopped
    3/4 cloves of Garlic finely chopped

    In a pan, add all the ingredients with a dash of oil and salt/pepper.
    Once the onions soften your ready for the stock.

    If you have no stock kicking about, grab some off the shelf stuff or cubes (I tend to use chicken), add some water, maybe a pint and simmer for a good 20-30 mins with a couple of bay leaves in. You will see it reducing and if you feel it needs a touch more water, wait until the blending/mashing has been done.

    After the 20-30 mins take out the bay leaves and then either use a hand blender (for smooth) or a potato masher (for something with consistency) until you get the desired texture. At this point add a little more pepper and some herbs (Oregano usually good).

    Simple as that. Add some cream when serving if desired. It will keep in the fridge for a few days.


    I recently boiled a Gammon joint with some Leeks, Onions, Celery. This took a couple of hours (for the first stage of a Jerk Gammon I was making) and the 'stock' was amazing. I give it a bit of a mash and placed in the freezer. The plan is to defrost it, sieve it into the next soup I make, whatever it will be.

    The wife likes to make a pea and mint soup. Same proceudre really and I am sure with the soup cookers all you need to do is sort your veg, place it in the maker and let the maker do the rest.

    I made a nice soup for Halloween. I don't measure quantities or anything & quite often just cook without a recipe just off the cuff so I'll try my best to remember how I made it. Was delicious by the way.
    Chopped 1 pumpkin into fairly large chunks (fist sized) put on a baking tray drizzle with olive oil & season with salt, pepper & some crushed chilli flakes. Also put on the tray a couple of large spicy chillies that I had, put in oven on 200oC for about 20 mins.
    Chop 1 large onion and fry until softens, add garlic and some ground coriander & cayenne pepper.
    When pumpkin is roasted add to the onions etc in saucepan & add about a pint of veg stock.
    Put lid on saucepan & boil for about 15mins.
    Put all ingredients into blender & blitz until smooth. Pour back into saucepan add a can of coconut milk & let simmer for about 20 mins.

    Left over turkey / dark meat.....

    Turkey & noodle soup

    Ingredients

    2 teaspoons olive or vegetable oil
    2 leeks, cleaned and chopped
    2 carrots, peeled and chopped
    1 clove garlic, minced
    1 stalk celery, chopped
    3 to 4 cups leftover cooked turkey, shredded or cubed
    2 to 3 bay leaves
    2 teaspoons dried thyme
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    8 cups of chicken stock
    6 ounces uncooked egg noodles
    1 cup frozen green peas
    2 tablespoons chopped fresh parsley leaves

    Directions

    Heat oil in a large stock pot over medium heat. Add leeks, carrots, garlic, and celery and saute 4 minutes, until soft. Add turkey, bay leaves, thyme, salt, and black pepper and stir to mix well. Add chicken stock and bring mixture to a boil. Reduce heat to medium-low, partially cover and simmer 10 minutes.

    Return mixture to a boil and add egg noodles. Cook 10 minutes, until egg noodles are just tender. Stir in peas and cook until peas are just heated through, about 1 minute.

    Remove from heat, discard bay leaves and stir in parsley.

    Made Goldberg's soup today and it was bloody delicious cheers buddy.

    Geezah's is next, i will try RSV's if my local supermarkets ever get any pumpkins in.

    You could Probobally use a large butternut squash instead If you can't find a pumpkin I suppose.
    Ooh just noticed in my recipe I haven't said to peel the pumpkin. Same with squash I find it easier to remove the skin after I've baked it.
