Been hooked on this recently - really an excellent zero/ low carb alternative to normal rice.
Cauli rice
1/2 a cauliflower,
1 tsp of cumin seeds (grounded in pestle & mortar),
1/2tsp of turmeric,
1/4tsp of paprika,
1 scotch bonnet chilli (leave seeds out or omit altogether if you don't like heat)
1/2 onion finely chopped,
1 tblspoon of coconut oil.
Grate the cauliflower using a cheese grater and place in a bowl.
Heat a pan and add coconut oil, add all the spices and fry on medium heat for about 30 secs, add onion and chilli and fry for 2-3 minutes.
Once the onion has softened add the cauliflower and mix until it colours (yellow), add about a 1/4 cup of water and cover pan for a 3-4 minutes, you can turn heat down to low and allow to steam.
I/2 a cauli will feed 2-3 people and serve instead of rice, this works well with both meat and fish.
Cooking time is around 7 minutes so its quicker than most carbohydrates to prepare!
