    Default Choc Chip Cookies

    Found this recipe the other day. Been making it with the kids. Best cookies I've had in a while. They're crispy on the outside and and soft and chewy on the inside. Makes about 18 cookies.

    Ingredients


    • 250g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 170g unsalted butter, melted
    • 200g dark brown soft sugar


    • 100g caster sugar
    • 1 tablespoon vanilla extract
    • 1 egg
    • 1 egg yolk
    • 325g chocolate chips

    Directions


    1. Preheat the oven to 170 C / Gas mark 3. Line baking trays with parchment.
    2. Sift together the flour, bicarb and salt; set aside.
    3. In a medium bowl, cream together the melted butter, brown sugar and caster sugar until well blended. Beat in the vanilla, egg and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Roll the dough into balls around the size of a ping pong ball. Place onto your baking try about 8cm apart. Do not flatten the dough as they will spread in the oven.
    4. Bake for 10 to 12 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking trays for a few minutes.

    Seems like a very short time to bake them? These must be pretty big too!

    I posted an Oat cookie recipe (I keep tweaking it every week), I have them as energy snacks at work as I either run or cycle in the morning. That is a lot less in terms of ingredients and I manage to make about 15 - 18 nice size cookies.

    I will see if the wife is interested in these and will give it a bash.

    People generally make the mistake of over baking cookies. They actually continue to bake after you take them out of the oven as they hold heat. Hence, you take them out whilst still slightly soft. A little practice with your own oven means you can get them bang on.

    The original recipe said 17 minutes and they burned. I tried 10 minutes and they do come out soft but once they're left on a wire rack to cool they crisp up nicely but are still soft and chewy in the middle.

    Do you have a fan assisted oven? I know that can play a part.

    With the Oat ones I do, I wait until the go slightly brown and then take out. They have been taking anything from 15 - 20 mins.

    I have the fan turned off

    Yes, I do use the fan oven. You'll just have to keep an eye on them.
