- 4 bottles of red wine
- 1 bottle white rum
- Bag of caster sugar
- 5 – 6 star Anais
- 5 cinnamon sticks
- Small jar of ground nutmeg
- Small jar of whole cloves
- Ginger root
- 1 large orange
- 2 lemons or limes or one of each
- Bottle of amaretto
This is the recipe for the stronger version. Obviously you can scale things up or down however you see fit and depending on which flavours you want to the fore you can adjust them too. For this measure you’ll need a large pan for comfortably holding at least 5 litres.
- Peel and dice the ginger root (about a palm full).
- Skew peel the orange and squeeze the orange juice into a bowl. Squeeze the lime and lemon into the bowl.
- Cut the lime and lemon into fours
Pour a large cup of water in the pan. Add in about 250g of caster sugar and bring to boil adding in about 20 -25 cloves, the star anais and the ginger. Break the cinnamon sticks and add them. Sprinkle the nutmeg powder in liberally. Stir for no more than 2 minutes before pouring the wine and rum in. Put the citrus juice in and add the peel as well as any flesh of the fruit leftover.
Bring the wine to simmer for about 30mins. Do not boil otherwise you’ll reduce the alcohol content.
Its great on its own but for a bit of a flavour variation you can also put a tot of amaretto in.
