    Default Bbq smoker resources

    Well thanks to ZX7R and his thread I've just spunked £200 on a ProQ Frontier smoker, a chicken rack, smoker rack, heat beads & some butt rub. Will be getting charcoal and wood chips after a bit more research.

    What I'm after is some good sources for buying consumables and some decent forums to join, hopefully some of you lot can help me out!

    Also looking at getting a PitmasterIQ, can you get battery operated waterproof ones? All seem to be mains powered imports.
    EDIT: BBQguru seem to do a battery powered one, still not waterproof though.

    Thanks in advance, I'll also update this with any info I find.

    You first need to source some good quality fuel. Use restaurant quality charcoal and not the crap they sell in supermarkets, petrol stations and DIY stores. Avoid briquets, they contain a filler additive that's not good for smoking.

    You will also need a chimney starter, the Weber ones are good. Don't use flammable liquids as they can taint the smoke flavour.

    The second link is the stuff you want, the blue bag charcoal. Try and find a local supplier to you. The reason is say local is down to storage. If its been kept in storage for ages and then its in transit to you for a few days then it gets damp and bashed about resulting in poor lighting and smaller chunks. A local company supplying take aways and restaurants locally to you will have a higher turnover so the charcoal will be better. I think Macro do this charcoal, so if your a member give them a try.

    Cheers for that, will ask at the local kebab house, plenty of them in Blackpool!
    I've got a Costco membership, hopefully they will stock something similar. If not the place I've linked to is in Burnley, not exactly local but close enough. Maybe I'll buy in bulk and store it, I could keep it in the house quite easily, I'm guessing it won't get damp inside.

    Good decision on the ProQ as I know that's a good smoker to start on and it produces good results.

    Find yourself a good local butcher for the pork and beef cuts.

    It's good that you have costco membership as their vacuum-packed baby back ribs are actually pretty good. They're not as meaty as proper US ribs but they're better than what you'll get at supermarkets. 4 racks in a pack and they're around 20 quid from what I remember.

    Baby back ribs and whole chickens are a good starting point as they cook within a few hours.

    The pitmasterIQ is a great device if you need to cook larger cuts of meat overnight - typically because feeding time will be the following afternoon. You can buy the device direct from the US manufacturers website. Go for the digital version if you do decide to order one - I may end up selling my old one if the replacement thermometer probe fixes the flashing error lights.

    Rubs:
    Pretty easy to make your own too. Just buy spices and mix them up. Typical rub is made up of: garlic powder, onion powder, ground salt and back pepper, some cayenne and/or chilli powder, ground paprika and brown sugar.

    I've had guests love ribs with just salt,pepper and soft brown sugar. So you don't need to go all out with different spices.

    Some good info there cheers!

    Have you tried smoking the Costco briskets? Noticed they sell them in packs of two for what seems to be a decent price. Always found their meat to be pretty decent...

    Also ordered a maverick et-73, should make life easier, I'm going to be cooking mainly on my days off and during the day so the pitmaster isn't essential just yet but I'm positive I'll need one in future.

    I've done quite a bit of BBQ'ing with various cuts of meat and seasonings, just never had a smoker to do the things I've always wanted to do, can't wait for it to arrive, feel like a kid at Christmas.... Been looking at them for ages, finding the 15% off code made it so I couldn't resist!

    Yeah mate, only done a couple of cooks, just couple of pork shoulders and some ribs.
    First go wasn't great, didn't give it long enough, my other attempts have been much better.

    Really surprised at how well the unit keeps temperature, got a maverick to keep an eye on it. Don't know if it's beginner's luck but not had any difficulties maintaining temperature, I have done a lot of research though. I use a mixture of heat beads and catering lumpwood charcoal.

    Not had much luck with the weather recently but aiming to do around 1 cook a month. Got plenty of rubs and things to try!
    Dying to do a brisket but going to get a little more practice in!

    Excellent. Sounds like you're well on the way to mastering the low and slow process! It's really satisfying churning out great quality BBQ - have you introduced friends and family to it?

    Brisket is easy. Get yourself a thermopen.
    Pork and brisket works out at around 1.5 hours per lb. Once the brisket hits 180F, foil it. Then keep cooking until internal temp gets to 203F (probe should slide through like butter). Take it off, wrap in tea towels and rest in a cooler or insulated silver bag for a good three hours (it will maintain it's heat/temp).
    Unwrap and slice against the grain. Pencil thick slices.

    I went to reds bbq not long ago and got their brisket, it came kind of shredded with a sauce... I assume to get it to pull rather than slice i just cook it longer?

    Sounds like you had the lovely 'burnt ends' in sauce. Typically cut from the outside of the point part of the brisket. (Just leave that part of the brisket on the smoker longer for the extra bark).
    Traditionally it is served as pencil-thick slices and the beef should melt in your mouth.
