    Default Ribs and Moinks

    Got some ribs and angus meatballs from costco yesterday so I decided to fire up the weber smokey mountain today.


    Set it at 275F with a chunk of cherry wood at the ready.

    Rib membranes removed and rub applied. Meatballs halved and wrapped in unsmoked streaky bacon.


    Ribs are on for 2 hours


    After 2 hours


    Moinks are on and ribs are foiled and put back on for 1 hour.


    Ribs back out of foil and sauced. Back on for one more hour.


    Smells guuuud!

    Plated up. Wow and yum. Moinks needed a little while longer.


    Desert.


    Hours later and I still feel way too full.

    Good work!

    Meat falling off the bone or a bit of a bite to the Ribs?.. HUGE debate on how they should be... I have my own preference
    I did an 8 hour slow cooker chilli yesterday with Pork Shoulder.. Leftovers tonight!

    I prefer a slight bite on the ribs but the misses prefers them falling off the bone.
    She likes pulling my pork too.

    Haha!

    The general feeling is that they need a bit of bite! I love Ribs either way but if it falls cleanly off the bone I will probably be happier.
