    Default Smokin' a monster full packer brisket

    Well I couldn't make it down to Paddle Around the Pier in the end (sadly). Alas, I have put on a spare brisket I had left from Grillstock, and it's a monster. 4.6kg, so it's going to take around 15 hours to cook.

    The brisket has been rubbed in an off the shelf product called Big Poppa Smokers 'Double Secret' Steak Rub. I'm using a couple of decent sized chunks of oak to produce the smoke and at this very moment I'm getting blue smoke which is ideal.

    Here's a pic of the start and I promise to post end results this time!

    Yeah, you'd normally preorder that from your butcher but there's a few places online you can order from too.

    So it's 13 hours in and the internal temp has hit around 180F. So It's time to foil that bad boy.

    Also prepared some Moink Balls to put in there at around 10am.

    Reached temp so it's off of the smoker now


    Foil open. Smells great.
    Going to cut some of the flat off and put that back on... see if I can produce some burnt ends.

    Been in hospital ten days ago for uppp operation on throat not ate proper meal since before then only last 2 days managed soup as been that painful, it's safe to say this bloody thread has me drooling 💦💦💦💦💦 god can't wait to eat something like this soooon 😤

    Moinks are glazed and the brisket flat is doing quite well converting to 'burnt ends' status. Nice bark but still tender enough inside to enjoy. Not perfect but pretty good.

    Another 20 odd minutes and it should be good for dishing up.

    Going to to serve it with home made potato salad, shop bought slaw and cornbread.

    Thanks guys. As you can tell, I'm pretty passionate about low n slow BBQ!
    I would like to cater for local/smallish events eventually. Although I cannot use my kitchen though as we have cats in the house.

    I'm stuffed now. Going to need a kip after a late night.💤💤
