I'm doing my own challenge that I started a few weeks ago but due to commitments I'm doing it less intensely over a longer time period (minimum 4 times cardio a week, eat very healthily). Now the problem I am having and that I anticipate for our journallers is keeping the diet interesting. Rest - fine, exercise - fine, diet - problematic!

Since I've started my 'challenge' I haven't eaten anything bad at all. The problem is that I find my healthy food (white meat, brown rice etc.) so boring that I will go without it at times because I have no desire to eat it. What we need to keep everyone going is creative recipes that are still extremely healthy but are a little exciting. So if you've got a great recipe that's healthy, tastes good and keeps you coming back for more then post it here because I'm really flagging at the moment!
