With out a doubt Steem http://www.blimey.strayduck.com/ - even emulates the midi ports.

Have a look at www.atari.st its got links to all the major ST emulators. Like Guido my favourite is STEEM as it emulators the blitter chip and 4 channel sound of the STE.
