"S" stands for...
At the 2018 Tokyo Game Show, Square Enix announced the next Dragon Quest game on the Switch would be officially known as Dragon Quest XI: Echoes of an Elusive Age S. According to creator of the series, Yuji Horii, the "S" covers all bases including the game being special and for the Switch. Alternative interpretations are "Shaberu" (speaking) and "Seiyuu" (voice actor).
Besides the title announcement, Horii reiterated the Switch version of the latest Dragon Quest would take Square Enix longer to develop. As for a launch date, there's still no word on when it will arrive. This only reinforces a comment made by Square Enix back in March when it said the game would take a while:
