    get a good bird
wash it under the cold tap, nothing comes from a dirty bird
carefully peel its skin from the meat and add butter, rosemary/sage mixture under the skin
clean out the orifice and stick in a lemon and a satsuma or orange (peeled)

Cover the whole bird in bacon (streaky is best as the fat content bastes the turkey)

Cook it on a low light over night and in the morning baste the bird with the juices around it
    cook until its nearly done

For the roasts, take the turkey from the roasting tin and de-canter to another dry tin and continue to cook until done
The residue turkey bits add a tablespoonful of goosefat, bring this to bubbling boil and add pre-boiled potatoes for roasties
set your oven to max for the roasties to quickly go crisp

    Enjoy

Baste it's interior with some of your home made batter.

bit late but for Xmas I had deep fried turkey for the first time ever. Takes around 50 mins for a 20lb bird @ 350 (use peanut oil). Wont ever roast another one again. Hands down the best turkey I've ever had.

    Thanks to Sanj[UK]
