it depends what you mean by adding just 1.
if you already have 1 HD and you add 1 to it, to have a total of 2, then yes RAID level 1 will work fine. But if you have 0 HD's and you add 1 to that then no RAID level 1 will not work.
the whole purpose or RAID level 1 is Disk Mirroring. In order to do this you must have atleast two HD's. The name pretty much implies what it does. You have one disk with the orginal data that is mirrored to the other disk. If the orginal disk dies then the OS automatically switches over to the mirror'd disk.
by the way the HD you are using to mirror needs to be equal or greater in size of the original disk.

I forgot to say that I already have 2 discs that are mirrored, is it then possible to add just one on the same channel??

so you mean you want 3 hard drives running in RAID1, right? well how would that work, maybe you could use RAID x (dunno what it's called) where it just makes all your HDs look like one and then use RAID1 on that. I don't even know if that's possible as they won't be different hard drives.
Or wait maybe I misunderstood you, do you want your new HD to be mirroring or to just be there without a RAID setup, like a normal HD?
