Get your foot off the accelerator....

    Only joking.
Does it do it when in gear cruzin? could be a sticky accelerator cable, trottle mechanism or idle regulator valve. Your auto choke may also be fault. Check the wires going to your air throughput pipes.
You need to be a bit more specific. Give me a senario. does it do it gradually whilst stationary or as soon as you put your clutch down? Do you go at a higher than normal speed when you have it in first gear?

Check for vacuum leaks around the inlet manifold area. Spray WD40 or such like around the manifold to check for leaks. the engine speed will change as the WD40 momenarily seals the leak. EGR valves can do the same, but so too can many other components, so its best to have it checked by a mechanic to save wasted time and money. I assume there is no management light showing? or is there?
