Open up Outlook
On the File menu, click on Import & Export
Select Export to a file
Select Personal folder file (.pst)
Select Personal Folders and put a tick in the box that says Include Subfolders
Select a location to save the PST file to and give it a filename
Job done
You will have to repeat this procedure for every user
Importing the messages back is the same process, only you select the option to import a PST file instead.

You can import the .PST file in to any version of Outlook.
