Cycling In Europe

Does anybody have any experience doing this? My mate and I would love to go around for a few weeks or a month. I'd like to go up to Denmark then down to Italy or Spain. Is it worth going that far away or just to stick to France and Belgium? Although there are French people in France so maybe I should steer clear of that one . Seriously though if anybody has any advice then it would be greatly appreciated.

Originally thought of doing it 'easy' i.e. Holland and Belgium which are full of special cycle lanes all over the countries. But the land is too flat. Would prefer something more challenging...like Seville to Almeria. Not sure about the heat though at that time of year...could be pretty unbearable especially uphill.

There are plenty of very cheap flights out with airlines like Ryanair from southern airports mainly but I'd highly recommend this as you can take your bike on board as long as its well packed.
