    Info Spagetti Carbonara

    Didn't know how easy to make this was will quite reacently. Spent years buying the jar or tubs. This tastes much better and is ready in 15 mins.

    2 slices of bacon or panchetta if you can get it.
    1/2 onion (finely chopped)
    1/4 clove garlic (finely chopped)
    1 egg (beaten up)
    cream
    Parmesan

    1. Soften onions, garlic with some olive oil in a saucepan slowly for 5 mins till onions go clear, empty out into a bowl.
    2. Stick bacon in the saucepan and fry for 5 mins till brown.
    3. Mix the egg, dash of cream and parmesan together with onions in bowl.
    4. Take bacon off heat and stir in egg mix, the residual heat from the pan will cook the eggs and thicken. Season to taste.
    5. Add cooked spagetti to pan, mix and serve.

    Only tips are -

    a. Watch the heat in the pan with the egg mix, too hot and you'll scramble the eggs...!
    b. And try to use freshly greated parmesan, buy a block. none of the smelly feet stuff...

    A True carbonara is actually the following:

    3 Egg Yolks & 1 Egg Beaten and set aside. Grate a couple of handfulls of parmeasan. Fry some lardons of bacon or pancetta. Cook spaghetti or tagliatelli til 'al dente' put pasta in a bowl while still steaming hot, add bacon, cheese and egg mix. Combine. Serve immediately. (The heat of the pasta will cook the egg).

    There is no need for onions, cream, garlic or anything else. Try it like this and you'll never make it another way.

    yeah - i just make it with egg and bacon and cheese. I always feel a bit sick afterwards tho - maybe too much cheese? - or because i've eaten too much

    something missing from these is black pepper, always adds to the flavour
