    Default Bombay Aloo

    Made this tonight, had it with naan bread, mango chutney, aubergine pickle and very oily potato wedges.

    Serves 4

    • 2 Tbsp olive oil
    • ½ tsp mustard seeds
    • 1 tsp cumin seeds
    • 2 medium onions - finely chopped
    • salt to taste
    • ½ tsp turmeric powder
    • ½ tsp chilli powder
    • ½ tsp fenugreek
    • ½ tsp garam masala
    • 5 potatoes- diced


    Heat oil in a large saucepan, add the mustard seeds and cook until they start popping then add the cumin seeds and fry for 20 seconds.

    Add the onions, salt to taste, cook until the onions are soft and starting to turn transparent .

    Add turmeric, chilli, fenugreek and garam masala and cook for a couple more minutes.

    Add potatoes and 150ml of water, cover and cook until the potatoes are soft - stir every few minutes and add more water if necessary to prevent sticking.

    tried this last night along with some chicken curry, onion salad and poppodums
    Mule - you didn't warn me that the mustard seeds would fly out of the pan and start burning me!

    anyway here's my feast... got plenty left over for tonight

    Ingredients: Potatoes, onion (only had red but white is preferable), Garam Masala, mustard seeds, ground fenugreek, ground turmeric, cumin seeds, chilli powder, olive oil, salt



    Fry mustard and cumin seeds in the oil till they start popping



    Add onions and salt, stir, cook until tender



    Add turmeric, chilli, fenugreek and garam masala, stir, cook for a couple more minutes



    Add potato and 150ml of water, stir, cook covered until tender, add more water if necessary to prevent sticking



    Cook until potato is soft
