Ingredients......

  • 2 Large undyed smoked haddock
  • 1 packet gruyere cheese
  • 1 Tub of fresh parmesan
  • 8 Plum tomatoes, de-skinned and de-pipped
  • 500 ml double cream
  • Salt and Pepper
  1. De-skin and de-seed the tomatoes leaving only the flesh ( boil tomatoes until the skin cracks to peel ) chop this up finely and spread out on the bottom of a casserole dish.
  2. Pull the skin off the haddock , removing any bones and chop into small chunks. Scatter the fish over the tomatoes.
  3. Grate the Gruyere cheese and scatter over the fish, scatter the parmesan over the fish.
  4. Pour the cream over the top and season.
  5. Cook on 180 for 30 minutes
Serve with fresh bread and salad
