Ingredients......
- 2 Large undyed smoked haddock
- 1 packet gruyere cheese
- 1 Tub of fresh parmesan
- 8 Plum tomatoes, de-skinned and de-pipped
- 500 ml double cream
- Salt and Pepper
Serve with fresh bread and salad
- De-skin and de-seed the tomatoes leaving only the flesh ( boil tomatoes until the skin cracks to peel ) chop this up finely and spread out on the bottom of a casserole dish.
- Pull the skin off the haddock , removing any bones and chop into small chunks. Scatter the fish over the tomatoes.
- Grate the Gruyere cheese and scatter over the fish, scatter the parmesan over the fish.
- Pour the cream over the top and season.
- Cook on 180 for 30 minutes
