    Default Green chilli ketchup

    Ingredients
    • 1 tbsp olive oil
    • 1 onion, finely chopped
    • 350g/12¼oz green tomatoes, seeds removed, flesh chopped
    • 1 green pepper, seeds removed, flesh finely chopped
    • 4 green chillies, seeds removed, flesh finely chopped
    • 1 smoked chilli, seeds removed, flesh finely chopped
    • 200ml/7fl oz white wine vinegar
    • 200g/7oz sugar
    • 1 tsp ground ginger
    • 1 garlic clove, finely chopped


    Method
    1. Heat the oil in a frying pan over a medium heat, add the onion and fry for 3-4 minutes, or until softened.
    2. Add the chopped green tomatoes, chopped green pepper, green chillies, smoked chilli, white wine vinegar, sugar, ground ginger and chopped garlic and bring to the boil. Boil for 12-15 minutes, or until the volume of liquid has reduced. Set aside to cool.
    3. Transfer the ketchup mixture to a food processor and blend until smooth. Transfer the mixture to a fine sieve suspended over a bowl and drain off any excess liquid. Season the ketchup, to taste, with salt and freshly ground black pepper.

    I saw this recipe on the TV show 'something for the weekend', I'm not sure that the recipe I have posted here is correct though (I copied it from the BBC website). The 'excess liquid' is actually the bit you are meant to keep and you are meant to condense it down. Gonna give it a try myself later.

    EDIT: Also, you don't need to finely chop anything as it says, it's all going in a blender ffs.

    Here's a pic of the finished product



    It tastes fantastic, really sweet even after I added a load of salt, you get the taste of the sweetness for 2 or 3 seconds and then the chilli kicks in after. I ended up using 3 Bird eye chillis and added 2 jalapenos as the bird eye are quite small and very hot. I also used cider vinegar as I was out of white wine vinegar which could account for some of the sweetness. I was expecting it to be vicious but because of the sweetness the chilli heat is just right.

    Jarred properly (pouring the hot mixture into a sealed sterilised jar) years. Once opened, it'll still probably last several months as long as it's kept refridgerated. That recipe only made the one jar and I'm quickly getting through it.
