Gonna Jailbreak my 3GS this weekend but am a little concerned about syncing my phone in iTunes following doing it. What can I not do once I have jailbroken?

there's nothing wrong with syncing your phone after jailbreak

If I want to unjailbreak can I just restore a standard firmware back on using itunes?
You cold always disable your network connections when you plug in your iPhone that way it can't go off and download anything that could fook it up (not that anything can fook it up but for your own piece of mind blah blah).
yeah as Livesytowers points out the only thing you have to worry about is that if you accidetally update to 3.1 (out soon) then Apple may have fixed the security flaw that allows you to Jailbreak/Unlock in version 3.
I'd advise you to go to this website below and d/l the official 3.0 firmware and always restore to that file.

I've jailbroken (but not unlocked) my 3gs. There are a few apps on cydia (like the soudnboards) which don't work on 3gs but everything else seems to work fine. If there was something that wasn't working I'd have found it by now..do it and enjoy it
