    Default Chicken recipes?

    Right need some help with some chicken I have.

    I have started to portion whole chickens so I can save some cash. The breast I have lots of recipes for but it's the other parts I'm short on ideas.
    Thighs I have a couple of recipes but would ideally like to do something with the drumsticks and wings as these seem to add up.

    you seen those roasting bags you can buy? The meat is so tender and juicy from them.

    yeah but i thought "fuck me its only a few herbs in a bag I could do that myself with my herbs rack"

    Nothing for the wings eaither. I am going to try one i think anyway but i need something for the wings like i said.

    lol, i meant just the bags. Asda sell them about £1.20 for 10 and you add your own spices.

    Those colmans ones and the others are a rip off

    Wings are great done like this.

    Get 1 CAN of Coca Cola
    330ml Sweet Chilli Sauce
    330ml Water

    Marinate the wings in the whole mix for 24 hours minimum of 6 and then cook in a pot on the stove for 30 minutes or until the meat is firm but coming away from the bone with little effort.

    This is for a batch of about 20 wings

    Wasn's sure if you where keeping and freezing your wings then looking at doing a batch cook.

    Remember if you did freeze them raw then defrosted them all to cook you can then refreeze them in portions.

    Just a thought

    The dog gets the raw wing tips in my house and the rest of the wings usually end up marinated and thrown in the oven to turn into Buffalo or Chinese hot sticky wings, there's not a lot of difference between them in terms of cooking tbh.

    Freezing them raw in the marinade is a good time saving tip, then they freeze/defrost and marinade at the same time.

    I like whole legs on the bone in a Red or White Wine sauce casserole type dish (coq au vin, chicken chassuer, chicken in white wine sauce ....) drumsticks would work the same tho. Remember to brown the skin 1st to stop it turning to rubber.

    That's a good idea. I'll have to look into doing that next time I do a big batch.

    Yes a get a raw chicken then portion and freeze so they are ok for up to 4 weeks. Was thinking with the weather coming nice these maybe great for BBQ. Going to have a try of the sweet chilli one I think. Mrs shark loves chicken wings but me not as much.

    Yeah cook the whole mixture in the pot. I you want them to be sticky style but still meaty on the bone then drain the wings from the liquid.
    Roast the wings in the oven for 15-20 minutes at 160. While that is happening bring the liquid to the boil then simmer till reduce by almost 2/3 then add the wings to that.
    Just be careful due to the sugar content in the coke and sweet chilli if you go too far you will carmelize the whole pot.

    As for the BBQ what sections of the chicken are you wanting to cook on it??

    There is always the obvious BBQ things like corn on the cobs in foil cooked in the coals and Baked Pots same way.
    This only works if you have a REAL BBQ and not a Gas one.

    Drumsticks and thighs for the BBQ. Use the wings as a side dish.
    I have a gas BBQ so no coals, though I could set a small drum BBQ up for some coals.

    Just search for Oven Bags or Roasting Bags, I use them with my Volcano for something else

    If you're gonna BBQ them try to do it slowly on a low heat or boil them in some flavoured water first to be sure they're cooked.

    Ribs are cheap and good for the Barbie if you eat piggies. Boil or steam a batch of racks together with some chilli, garlic, ginger ... etc for a couple of hours and freeze them with a bit of the boiling liquor for barbecuing later. Boiling or steaming them for a couple of hours gets the flavour right in there, ensures they're cooked all the way thro, makes them tender so the meat comes off the bone easily and makes them simple to grill or BBQ. Save the liquor when u defrost and use it as as base for the sauce/coating, there's loads of recipes for sauces out there usually involving honey or sugar to baste them with to get that coating.

    Drumsticks and thighs are great marinading with some Garlic, Lemon and thyme. Just get a whole bulb of garlic an crush with your hands to expose the cloves then get a whole lemon cut into 8-10 pieces and whole sprigs of fresh thyme all put together in a bowl or tub with enough oil and sea salt to make a coating on them.

    Again the longer you can marinade the better. When cooking these on a BBQ be sure to get on to a medium heat but also ensure turning all the time and cooked thoroughly aswell.

    Love this dish my recipe tweaked from another i found on the internet.
    Paprika chicken with chorizo
    serves 4
    4~6 pieces of chicken any cut, preferably with the bone in. or about 10 drumsticks depending on size.
    Good pinch of Salt.
    Good pinch of Pepper.
    1 tin of tomatoes.
    1 tin of butter beans.
    1 large onion.
    2 garlic cloves crushed then chopped.
    1 tablespoon of smoked or hot or normal paprika.
    1 teaspoon of Worcestershire sauce
    150grams of chorizo sliced.
    200ml water add 50ml more if you want more sauce. !
    fry the chorizo until brown
    brown the chicken in the chorizo oil then add the paprika dont burn it!
    put in the rest of the ingredients stir, bring to a simmer either pop in a casserole dish or cook on the hob, on a low heat for a hour.
    Serve with crusty bread.
    Quick and easy ..

    Anything you like, I just have crusty bread to mop up the juice .

    I know Chickens can be cheap, but I have started to buy chicken thighs.
    I have played with the whole ones and the fillets. I prefer the fillets but they cost a little bit more.

    These make great noodle soups or 'Coq-au-vin'
    Also I often boil the thighs in chicken stock for 20 mins, shred with two forks and then marinate for a curry or add to soups/pasta etc...

    Waitrose now sell bags of chicken breasts for £10. You get about 7-8 individually wrapped breasts that can be frozen. They also sell 'crusts' of various flavours. They are basically tubs of breadcrumbs with various flavourings like Lemon and Herb or Chilli and Corriander.

    Simply oil the breasts, cover in the 'Crust' and bake for about 20 mins.

    Fantastic with Salad etc... sliced up!

    Thighs are my favorite however. Cheap and very tasty in curries etc.

    I portioned 3 chickens yesterday and will be eating them over the next 2 weeks.
    Cost me £12 from asda. Yum yum.
    Thigh fillets are they the thighs without bone? Surely you can take the 30 secs to cut them out your self.

    Yes no Bone or Skin.

    I guess you could boil them up and rip off the bone, but I think the price was something like 20p different.

    Just use a sharp knife to take the bone out. Did it the other day to make a spicy chicken thigh. If your only paying a extra 20p I suppose it's not worth the hassle.
