    Default Cascabel Chillies

    I have some of these cascabel chillies but have never used them before and am struggling to find anything decent to cook using them - anyone used them? anyone know what best to use them in / any recipes?

    They're only 3000 scovilles so should be pretty mild. I'd slice them and use them as a pizza topping or throw them in the filling for a fajita.

    Never used them before from what i've just looked up looks like they're usually dried and used in sauces. Maybe fill them with a nice soft cheese and grill?

    Yea I was thinking of sticking them in a salsa or some sort of tomato sauce or something - strange there are not more recipes about using them as they are quite a big thing in Mexico I think

    Yep they are dried - will soak them in hot water like I do with ancho's etc I guess to rehydrate

    I would use them dried in a chilli with other types of chilli to give it a different edge. I usually use four types of pepper in my chillis and it makes for a good taste with various accents.

    I made a good sauce by simmering chipotles in water vinegar and something else - will dig the recipe out. Then blending it up.
    All mates were raving about it.
    Was good for dipping and I lobbed the last of it in a chilli for a smokey flavour

    Will probably end up doing this with some of them I have a few different ones here as well will have a bash this weekend
