Tomato soup recipes to use up cans of chopped tomato's?

Had a cupboard clearout today and noticed I've got way too many tins of chopped tomato's coming close to the use by date and thought about making up some soup with them for freezing.

Anyone got any recipes that don't include having to buy a shed load of other things to add?

Do canned foods go off?

I always thought they were pretty much ok

I've seen cans of food years after they were out of date be perfectly edible

I would just boil a load up with vegetable stock a little garlic and a little onion maybe some basil then maybe a little arrowroot or another thickener, potato? maybe a splash of cream salt and pepper whiz it all up should be fine

I quite often do something similar to this for a quick snack. Low calorie as well so great if on a diet. (">

Thanks guys. I'll be looking to add some stock and a few bits to it then.

I've heard about certain foods being edible when out of date etc. but being a bit cautious with tins as I worry the metals may contaminate the contents if left too long. Dried goods like pasta etc. I don't mind and use well after the date.

Should be fine as long as they're not dented (there's a coating inside). You could also make up a batch of a tomato pasta sauce or something/base for chilli/spaghetti Bol etc?

Finally got round to giving it a go this morning. Couldn't find a bay leaf but used a little nutmeg I had in the cupboard.

I noticed the date was actually December 2011 though.

Browned a little onion and garlic in the pan with a spoon of olive oil. Then added two tins of tomatoes, brought to simmer, then what I did for a bit of texture etc. rather than shell out on some cream was cut the crust of some soft white bread, then cut bread into small pieces and added to the pot.

Let it all simmer until bread starts to break down, then put in blender and whisked it all up with another small spoon of olive oil and a spoon of sugar.

Put back in pot, made up a couple of cups of veg stock and gradually added that to the desired thickness I wanted, seasoned and simmered to reduce a little.

Tastes really nice and cheaper than the tins of soup in the shops as I've made a batch of it and got about a gallon of the stuff using up the cans of tomatoes.
