By folding bike, I assume its not just a regular bike that folded when you sat on it?

High pressure slick road tyres (good ones) and swapped the forks for rigid but light ones. Swapped the pedals for something more suitable and just changed the geometry a bit, raised the saddle and bars iirc

It has them on. I did once look into replacing the crank set as it's only got 7 gears but leisure lake bikes wanted something like £300

You need a rear mech, cassette with more cogs, a new shifter and a new chain. Not 300 sheets. Can do you a deal on stuff make it 8 speed.

Won't I need a new crank set as mine only as one set of teeth?

Got a couple of them if you need one so would in effect give you 24 if you do the 8x switch or 21 if you do it with the current setup. I used to run my old GT as a work bike and did about 9/5 miles a day to work on it, some bypass and some cycle path and used to run 8 cogs at the back and one big one at the front, a 46 tooth one. was fucking ideal, used to get up to around 35 on the bypass with minimal effort on 1.8 inch tyres. It had a long stem and had a long top tube anyway but was great for that sort of ride every day.

edit: Actually looking at the frame you might have trouble putting a front mech on to shift the gears as there doesn't look to be room. Also worth checking is if there is a cable route for a front gear cos that might stop you doing that.
