    Default fresh crevettes with garlic and chilli..

    FResh crevettes with garlic and chilli.

    remove head and shell of crevettes, then score the back and remove the black vein beneath the skin..

    heat olive oil in a pan, season crevettes with salt and black pepper, then cook until crevettes go pink and curl up.

    remove crevettes to warm plate, with pan still on the heat, add chopped garlic, and fry until golden, add chillis ( as hot as you like). I added Cayenne pepper, as I didnt have any at the time. Add 2 heaped tablespoons of butter, a generous helping of finely chopped parsley, half a lemon juice.
    when it all starts to bubble, turn heat down to simmer and add crevettes back to the pan, basting them in the sauce for 1 minute until theyve taken on the flavours.

    serve with simple baby leaf salad or whatever you like really.

    I have to be honest, I did think 'Garlic on Pancakes???'

    I now know that a crevette is a big prawn.
