think you can do that with software, sure TTTracklog was thing I tried years ago,
I used it on one of those cheap Chinese sat navs
If you use Google maps on a smart phone. It records the history and saves to your Google account. Search locationhistory. I have this enabled and recorded my trip to America last April

I run an app called Moves on my iPhone in the background and it tracks everything I ever do! It works fine in the background while TomTom is running and records times, routes, everything!
It's a stalkers wet dream!
any of the newer garmin walking gps's or some of the cycling ones that do mapping can do this.
I've used a Garmin etrex 30 as a sat nav with their city navigator map set and that records the route you've taken which you can export and then analyse in anything you want.
