    Default Black eyed beans

    So I have picked up a load of cans of black eyed beans not really sure what to do with them? Any ideas?
    Am not eating any meat at the moment so vegetarian ideas if anyone has any?

    Are you averted to frying? BEP make lovely fitters (falafel) but could be baked I suppose. Shelling them is a bit of a PITA but blend 'em up with with some garlic, onions, herbs/spices (and maybe an egg). Fry the shit out of them and dip in a fresh green chili sauce. Byewtifew.

    Beans always make a great veggie Chilli....
    Often when the Mrs doesnt fancy meat (no pun intended) I use beans to make a great mexican enchilada....
    basically burritos covered in spicey tomato sauce cheese and then baked in oven...

    Chilli for me too. They are a great substitute for meat in a great Chilli, just cook it nice and slow.

    Sounds good will try this one the weekend

    Also Chilli is a no brainer will bang in some other beans as well

    Made a great meal on Saturday with black beans

    2 cans black beans
    2 cans chopped tomato
    2 red bell peppers
    1 red chilli pepper
    1 onion
    1 garlic clove
    1 tablespoon ground coriander
    1 tablespoon ground cumin
    1 tablespoon brown sugar
    150 ml vegetable stock

    handful of fresh corander for garnish
    sour cream for garnish
    fresh lime juice for garnish
    feta cheese crumbled up for ganish

    fry off the onion garlic and bell peppers until soft then add the spices and and sugar, make sure everything is coated then add the beans and tomatoes plus 100ml of the veg stock

    simmer for 30-40 mins and add the rest of the stock if it gets too dry

    done, serve with fresh chopped coriander mixed in lime juice and some sour cream also some feta sprinkled over the top not sure why feta but it does work

    Because you could put feta on a shoe and it would still taste good.

    Sounds like a nice low-carb recipe you did. There's a similar Russian dish that uses kidney beans, veh tasty.
